The Perfect, Easy, Roast Beef... with Bacon!

A perfectly cooked (and easy!) roast beef with practically no fuss, and tons of flavor!

  • 2.5 lb top round sirloin roast (trimmed of fat)
  • 1 large Idaho potato (peeled, halved and sliced)
  • 1 large sweet potato (peeled, halved and sliced)
  • ¼ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp brown sugar
  • 3 slices bacon (I used applewood smoked bacon)
  • 1.5 cup beef broth
  1. Preheat oven to 400 degrees
  2. Place roast in a deep, large skillet
  3. Sprinkle potatoes around the roast
  4. In a small bowl, mix together paprika, salt, pepper and brown sugar
  5. Rub seasoning mixture into roast
  6. Place the bacon on top of the roast covering as much surface area as possible
  7. Pour broth over potatoes, NOT over the roast
  8. Cook at 400 degrees for 45 minutes
  9. Reduce oven temperature to 250 degrees and cook for approximately 1 hour and 15 minutes, or until the desired temperature
  10. Remove from oven and let sit (or rest) for 10 minutes before slicing
  11. Slice and serve with the potatoes
