This kale salad is crunchy, chewy, sweet, tart and salty all at once. It is perfect as a side dish, or a meal. It is also paleo and Whole 30 compliant...and delicious!

Serves: 3 servings
Ingredients
3 cups Kale (washed, dried and finely chopped)
⅓ cup Dried cranberries (I used Whole Foods apple juice infused cranberries)
⅓ cup Walnuts (shelled and crushed)
3 Tablespoons Olive Oil
¼ cup Juice from one large lemon
Salt & pepper to taste
Instructions
Place kale, cranberries & walnuts in a bowl big enough to mix the ingredients
Drizzle olive oil and lemon over the salad and mix well
Season to taste with salt and pepper
Cover and refrigerate for at least 30 minutes before serving so the kale softens and the flavors meld.
